I was looking for a quick salad to make for dinner the other night but I wanted to make sure it had all the essentials in it, I came across
this salad at the Stacey Snack's blog and adapted it to what we had on hand. I also used a low fat bottled Balsamic vinaigrette with it. It was really good and so simple.
Ingredients
- 1 bag baby spinach, washed and torn
- 1 can chickpeas, drained and rinsed
- 1 tomato, diced
- 50 grams thick salami, sliced
- cheddar cheese, diced
- walnuts, chopped
Combine and top with your favourite dressing.
